Gammon with Pineapple Salsa

Ingredients

  • 4 Gammon Steaks, visible fat removed
  • Low calorie cooking spray
  • 225g Fresh Pineapple Rings
  • 1 Green Chilli De-seeded and chopped
  • 4 Spring Onions, sliced
  • 2 tbsp Finely chopped fresh mint
  • Juice of 1 lime

Method

Light the BBQ for direct medium heat.

Spray the Gammon with low calorie cooking spray, seaosn with freshly ground black pepper and BBQ along with the pineapple over direct medium heat for 8-10 minutes, turning once. (Or cook on a griddle pan over a medium/high heat.)

Meanwhile put the chilli, spring onions, mint and lime and lime juice into a small non-reactive bowl (glass, ceramic, plastic) and mix well.

Roughly chop the pineapple and stir into the spring onions to finish the salsa.

Serve with the gammon and plenty of salad.
