Creamy Mustard Pork with Greens
Ingredients
- Low Calorie Cooking Spray
- 600g lean pork fillet, visible fat removed, sliced
- 2 onions, thickly sliced
- 200g Button Mushrooms, sliced
- 2 tsp Mustard powder
- 200ml boiling chicken stock
- salt and freshly ground black pepper
- 300g Green cabbage, roughly shredded
- 200g spring greens, shredded
- 3 tbsp quark
- 4 tbsp chopped gherkins

Method
Spray a large no-stick frying pan with low calorie cooking sprat and place over a high heat.
Working in batches, add the pork slices and fry on each side for 2-3 minutes or until lightly browned.
Remove with a slotted spoon and transfer to a plate.

Add the onions to the pan and tun the heat to medium.
Stir-fry gently for 3-4 minutes or until softened.
Add the mushrooms and stirfry for 4-5 minutes or until softened.

Mix the nustard with the stock, pour into the pan and add the pork and 2 teaspoons of coarsely ground black pepper.
Bring to the boil over a high heat, reduce the heat to medium and cook gently for 10-12 minutes.

Meanwhile, cook the cabbage and spring greens in a large saucepan of lightly salted boiling water over a high heat for 4-5 minutes or until tender.
Drain and return to the pan then season to taste, cover and keep warm.

Remove the pork from the heat, stir in the quark and gherkins and serve hot with the cabbage and greens.
