Easy Sausage Cassoulet

Ingredients

  • Low Calorie Cooking Spray
  • 250g of back bacon rashers, visible fat removed, roughly chopped
  • 1 onion, roughly chopped
  • 2 carrots peeled and cut into chunks
  • 4 celery sticks diced
  • 4 garlic cloves, crushed
  • 12 slimming world syn free sausages
  • 3 x 400g Haricot Beans, drained
  • 300ml of boiling chicken stock
  • 4 tbsp Tomato Puree
  • 400g can of chopped tomatoes
  • 1 tsp dried chilli flakes
  • 2 tsp dried herbes de provence
  • salt and freshly ground black pepper
  • Small handful of chopped fresh parsley to garnish

Method

Spray a large non-stick frying pan with low calrie cooking spray and place over a high heat.

add the bacon, stir fry until just crisp and tipinto a shallow lidded caserole dish

respray the frying pan with low calorie cooking spray, turn the heat to medium and add the onion, carrots, celery and garlic.

Stirfry for 6-8 minutes or until softened and then tip into the casserole with the bacon.

Pre-heat the oven to 180C (fan 160C, gas 4).

Wipe the frying pan with kitchen paper, respray with low calorie cooking spray and add the sausages.

Stir until brown all over, then slice thickly and add to the casserole along with the beans.

Pour the stock into the frying pan, scraping off any tasty bits and bring to the boil over a high heat.

Add the tomato puree, chopped tomatoes, chilli flakes and herbs.

Season to taste, stir well and pour into the casserole.

Put the casserole into the oven and cook for 30minutes or until bubbling.

Scatter over the parsley and serve hot.
